Onion Bahji (spicy onion fritters)to make

I love vegetable curry, especially potato and spinach, but one of the things I like most is the bits and pieces that go with it, like naan bread and onion bahji’s. There are plenty of nice ones that you can buy, but my Dad and I like home made ones the best:

home-made spicy onion frittersIt is so easy to do: the main ingredient (apart from onions, of course) is Gram flour – that is flour made from chick peas most supermarkets have it.

You need about 150 grams, a bit of salt and 5 ml of bicarbonate of soda, then the spices; there are lots of recipes so you can vary this to suit your tastes but we use:

  • cardamon pods, about 4 – seeds only, crushed (throw away the husks)
  • turmeric (1 tsp)
  • chili powder (1 tsp)
  • garam masala (1/2 a tsp)
  • about 2 tablespoons of freshly chopped coriander
  • coriander seeds, crushed (2 teaspoons)

Mix all the spices together with the flour

Then add 2 big onions, very finely chopped. Add a little water to bind it all. Then get a deep fat fryer hot (can do it in the frying pan) and with two spoons make shallow patties and ease them gently into the oil (OK, Dad does this bit).

Cook for about 4 minutes until they are golden brown, drain and cut one to check it is cooked all the way through – if you make them too think they may still be soggy in the middle – so make them flatter, you can put them back in for a couple more minutes to make sure they are cooked all the way through. Just do 3 or 4 at a time, and when cooked drain them on kitchen paper.

Serve with lime wedges

Potatoes

I don’t know about you but I’m mad on potatoes, and I mean really mad on them. I could live off them. But the reason why I like them so much is because you can do so much with them, like:

mash

boiled

chips

potato skins

crisps

hash-browns

potato fritters

Jackets

and much much more.

Here is a recipe for a simple jacket potato. I always ask for cheese and beans on my jacket when I’m out.  So here is how i do it at home:

  • I prefer to bake the potato the old fashioned way, in foil in the oven – for as long as it takes – say 1 to 1 and a half hours, but to speed it up I sometimes put the jacket potato in the microwave for 5 mins first, then wrap in foil then put it in a pre-heated oven at 200C for half an hour to 1 hour
  • now prepare the filling – OK, that just means warming some baked beans and grating your favourite cheese
  • When the potato is done to your liking, add a little butter if you like, then the warm beans and top with the cheese
  • serve with salad or spinach (or other veg)

Easy-Cheesy Veg!

Hi, just thought I would share one of my favourite little recipe . To bringhten up many vegetables and to make a quick, delicious snack, just add your favourite cheese. For example, I often take a nice fresh courgette , and slice it legnth-ways. Brush them with a little oil in an oven proof dish and pop them in an oven to bake for about 10 minutes until they soften a bit.

Then I just add some mozzarrella cheese and also some chopped, fresh tomatoes and put it back in the oven until the cheese has bubled and melted, quick and easy to do.

You can do the same with Aubergine, Marrow etc.

The only problem is that my non-veggie parents also like it and they usually pinch it for themselves!

My Favourite Recipie

I like to try new ideas as often as I can, but I also keep coming back to the same old favourites, but there is nothing wrong with that. One of these old favourites of mine is Stuffed Aubergine Slices.

I found this recipe in a great little book from M&S called Easy Vegetarian it is really easy and tastes delicious. I can’t give you the recipe as that would be breaking the copyright but the combination of Aubergine, tomato, mozzarella and fresh basil is gorgeous, and it goes down well with non vegetarians also!
